1/2tsp Onion Powder
1/2tsp White Pepper
2tso Cayenne Pepper (use less or more depending on your preference)
Neutral-Tasting Oil (such as vegetable or canola oil | for frying)
Method
Jackfruit Marinade
- Drain and squeeze the jackfruit to remove excess water.
- In a bowl, combine all the marinade ingredients with the jackfruit until all jackfruit pieces are well coated.
- Set the bowl aside.
Vegan Buttermilk
- In a medium-sized shallow bowl, gently whisk all the ingredients till fully combined.
- Set aside for 6-8mins.
Crumbs
- Combine the cornmeal and flour in a flat plate.
- In another flat plate, combine all the spices with the Panko bread crumbs.
Vegan Zinger Fried Chicken
- Heat up the oil in a deep frying pan.
- Coat the marinated jackfruit (one piece at a time) in the flour mixture, then the buttermilk, and finally, the breadcrumb mixture. Optionally, you can double coat the jackfruit piece by coating it in flour then the buttermilk again.
- Press gently, but firmly to make sure the breadcrumbs stick.
- Fry the pieces in the oil on medium-low heat until golden brown (ensure the oil is not too hot as the breadcrumbs can burn very easily).
Serve.
Serving Suggestions: Serve hot as a snack, with chips and dips or in a burger.
