Vegan Zinger Fried Chicken by Tully Chanana


This amazing vegan zinger fried chicken was created by Tully Chanana who runs the Instagram page, @tullyzkitchen, and very entertaining TikTok page also with the name tullyzkitchen on which he shares many fun recipe and short motivational videos.

This vegan zinger fried chicken is a crowd-pleaser packed with a lot of flavour and extremely easy to make. We know you will enjoy it!

Ingredients (makes 8-10)

Jackfruit Marinade

1 x 400g Can of Young Jackfruit

1 Vegan Chicken Flavoured Stock Cube

1tbsp Nutritional Yeast

1/2tsp Black Salt (substitute with regular salt)

Vegan Buttermilk

1 cup Soy Milk (substitute with plant milk of choice)

1tbsp Apple Cider Vinegar

1tbsp Maple Syrup

1/2tsp Tabasco Sauce (use less for less heat)

Crumbs

1 cup Panko Breadcrumbs

3/4 cup All-Purpose Flour

1.5tbsp Corn Meal

1/2tsp Smoked Paprika

1/2tsp Vegeta Mix (substitute with 1 vegetable stock cube)

1 Vegan Chicken Flavoured Stock Cube

1/2tsp Dried Basil

1/2tsp Dried Thyme

1/2tsp Dried Oregano

1/2tsp Mustard Powder

1/2tsp Garlic Powder

1/2tsp Onion Powder

1/2tsp White Pepper

2tso Cayenne Pepper (use less or more depending on your preference)

Neutral-Tasting Oil (such as vegetable or canola oil | for frying)

Method

Jackfruit Marinade

  • Drain and squeeze the jackfruit to remove excess water.
  • In a bowl, combine all the marinade ingredients with the jackfruit until all jackfruit pieces are well coated.
  • Set the bowl aside.

Vegan Buttermilk

  • In a medium-sized shallow bowl, gently whisk all the ingredients till fully combined.
  • Set aside for 6-8mins.

Crumbs

  • Combine the cornmeal and flour in a flat plate.
  • In another flat plate, combine all the spices with the Panko bread crumbs.

Vegan Zinger Fried Chicken

  • Heat up the oil in a deep frying pan.
  • Coat the marinated jackfruit (one piece at a time) in the flour mixture, then the buttermilk, and finally, the breadcrumb mixture. Optionally, you can double coat the jackfruit piece by coating it in flour then the buttermilk again.
  • Press gently, but firmly to make sure the breadcrumbs stick.
  • Fry the pieces in the oil on medium-low heat until golden brown (ensure the oil is not too hot as the breadcrumbs can burn very easily).

Serve.

Serving Suggestions: Serve hot as a snack, with chips and dips or in a burger.
