Veggie Tomato Sauce


Half an onion, chopped

Ginger, minced

Garlic, minced

2-3 Tomatoes, chopped

1 Large Carrot, grated

Green Leaf Vegetable of Choice, finely chopped

2 tbsp Tomato Purée


Bay Leaf

Sea Salt

Black Pepper



Chilli Powder (optional)

Lemon/Lime Juice

Maple Syrup/Sugar

Soy Sauce


  • Water-fry the onions, ginger, garlic and tomatoes until fragrant
  • Stir in the vegetables and cook for about a minute before incorporating the tomato purée, bay leaf and passata
  • Cook down for a few minutes then stir in the spices, soy sauce, lemon juice and maple syrup to taste.
  • Leave over the heat for another 1-2 minutes before serving.
