Half an onion, chopped
2-3 Tomatoes, chopped
1 Large Carrot, grated
Green Leaf Vegetable of Choice, finely chopped
2 tbsp Tomato Purée
Chilli Powder (optional)
- Water-fry the onions, ginger, garlic and tomatoes until fragrant
- Stir in the vegetables and cook for about a minute before incorporating the tomato purée, bay leaf and passata
- Cook down for a few minutes then stir in the spices, soy sauce, lemon juice and maple syrup to taste.
- Leave over the heat for another 1-2 minutes before serving.
